Kathryn Jean "Kathy" Eichstedt, a beloved mother, grandmother, and
great-grandmother, passed away peacefully on the morning of March
7, 2025.
Born on October 9, 1944, in St. Joseph, Missouri, Kathy later moved to
Belmont Shores, California with her two children, Douglas and Kelly,
where she worked as a dedicated manager at Manson navigation
shipping for over 15 years. Known for her unwavering work ethic and
pursuit of excellence, Kathy provided her children with a wonderful life,
thanks to her resilience, determination, and relentless drive.
Kathy eventually relocated to Fallbrook, where she was able to enjoy
being near her parents, son, and beloved grandchildren. She was a
devoted and loving matriarch to her family, cherishing every moment
with her children, grandchildren, and great-granddaughter.
Kathy had a deep love for animals, especially dogs, and found joy in
many things, including gardening, collecting antiques, traveling the
world, and sharing her culinary skills by preparing delicious meals for
loved ones.
She is survived by her son, Douglas "Doug"; grandchildren, Katelyn,
Kristina, Ashlee, and Luke; great-granddaughter, Faye, and other
beloved relatives.
Kathy will be remembered for her boundless love, strength, and the
lasting impact she had on all who knew her.
