Obituary

Elizabeth Janet Stutheit Gilby passed peacefully in her sleep September 17, 2021.  Betty was born May 31, 1919 in Gothenburg, Nebraska.  She received a B.A. degree from Texas State College for Women and an M.A. in nutrition at the University of Iowa.  Betty then worked as a therapeutic dietitian at Doctor's Hospital in Washington D.C. until volunteering to serve in the U.S. Army.  Beginning in March 1943, she served  in the 5 th Army in North Africa and Anzio, Italy as part of the liberation of Italy from Axis forces. After the war, she worked on a Ph.D. at the University of Chicago thanks to the G.I. bill.  During that time, she met Joe Gilby Jr. and was married June 15, 1947.  After the wedding, Betty worked as a dietitian, did research, and taught elementary school in the Chicago area. Betty and Joe moved to Fallbrook in 1990.  Betty was an active member of VFW Post 1924, the American Association of University Women (AAUW), Fallbrook Woman's Club, Fallbrook Historical Society, and was a Life Master bridge player, among other community engagements.  She is survived by four children - Beverly, Joanne, Elaine, Joseph III - five grandchildren, three great-grandchildren, and one great-great-grandchild. A reception will be held at the Fallbrook Woman's Club on Sunday, October 10 at 11 A.M., and a graveside service will be held at Riverside National Cemetery on Monday, October 11 at 11 A.M.

In lieu of flowers, please make donations to the Fallbrook Woman's Club, AAUW, Foundation for Senior Care, and VFW Post 1924.
